<jats:p>This research during wheat of the plant local Andijan-1, Alikseyevich and Century varieties in the grains anti-radicalism activity properties DPPH method using research was done . Obtained results this shows that all in samples antioxidant activity existence identified , their level sample size and time increase with integral accordingly exceed progress observed . Most high anti-radicalism activity Alikseyevich type (ARF – 10.98%) recorded This is done . of the variety in the grain biological active to substances wealth The IC₅₀ values were also confirmed for this the results supporting , Alikseyevich of the variety the most strong antioxidant to the feature has that showed . Obtained results wheat varieties antioxidant features their chemical composition , in particular phenolic compounds to the amount dependence shows .</jats:p>
