Abstract
<jats:p>In medicine, many medicinal plants are of invaluable importance due to their healing properties. Sorrel (Rumex) is no exception, and because of its therapeutic qualities, it is widely consumed as a food source. The plant contains a variety of vitamins, minerals, phenolic compounds, antioxidants, as well as macro- and microelements. This article examines the determination of water-soluble vitamin content in sorrel extract using the HPLC (High-Performance Liquid Chromatography) method.</jats:p>
