Abstract
<jats:p>The cognitive dysfunction caused by Western diet is a recent worldwide issue, which is caused by the overconsumption of high-fat, high-sugar, and ultra-processed products and foods. It is a diet that causes a rapid progression of neuroinflammation, oxidative stress, insulin resistance, gut microbiome dysbiosis, and blood-brain barrier dysfunction, which result in synaptic dysfunction and gradual cognitive impairment. Crocetin is an antioxidant, anti-inflammatory, and metabolic-modulating bioactive carotenoid derived from saffron and Gardenia jasminoides is an effective neuroprotective agent. It improves the work of mitochondria, increases the level of brain-derived neurotrophic factor (BDNF), changes PI3K/Akt signaling, and strengthens the gut-brain axis, which leads to a better cognitive resilience.</jats:p>
