Abstract
<jats:p>Биопленки на поверхностях технологического оборудования молочной промышленности являются устойчивым источником вторичного микробного обсеменения, могут снижать эффективность санитарной обработки и влиять на качество и безопасность выпускаемой продукции. Стандартные режимы безразборной мойки и дезинфекции не всегда обеспечивают полное удаление зрелого внеклеточного экзополимерного матрикса, что определяет необходимость поиска дополнительных факторов воздействия, совместимых с рабочими растворами средств санитарной обработки. Одним из возможных подходов является введение в моющие и дезинфицирующие растворы мелкодисперсных твердых частиц, потенциально способных создавать локальное механическое воздействие в пристеночном слое потока. Цель исследования заключалась в расчетном определении рациональных диапазонов радиусов твердых дисперсных частиц для рабочих растворов безразборной мойки молочного оборудования на основе оценки их седиментационной устойчивости, диффузионного распределения и химической совместимости с кислой и щелочной средой средств санитарной обработки. В качестве дисперсионных сред рассматривали растворы на основе надуксусной кислоты (НУК) и пероксида водорода с концентрацией 0,045; 0,075; 0,150 % (по действующему веществу – НУК), а также растворы гидроксида натрия с массовой концентрацией 0,5–2,0 %. В качестве твердой дисперсной фазы анализировали карбонат кальция, диоксид кремния и диоксид титана. Верхнюю границу радиуса частиц определяли по закону Стокса из условия ограничения скорости седиментации, нижнюю – с учетом соотношения седиментационно-диффузионного равновесия частиц по высоте столба жидкости. Установлено, что для рассмотренных материалов нижняя расчетная граница радиуса составляет 4,2–5,3 нм, верхняя – 377–547 нм. Для карбоната кальция в щелочной среде расчетный диапазон составил 5,2–547 нм, для диоксида кремния в кислой дезинфицирующей среде –5,3–530 нм, для диоксида титана –4,2–379 нм. Более узкий диапазон для диоксида титана обусловлен его большей плотностью. Показано, что изменение концентрации рабочих растворов в исследованных пределах оказывает незначительное влияние на расчетные границы радиусов частиц.</jats:p> <jats:p>Biofilms on the surfaces of technological equipment in the dairy industry are a persistent source of secondary microbial contamination and may reduce the efficiency of sanitary treatment, thereby affecting the quality and safety of manufactured products. Standard clean-in-place cleaning and disinfection regimes do not always ensure complete removal of a mature extracellular exopolymeric matrix, which necessitates the search for additional treatment factors compatible with working solutions of sanitary agents. One possible approach is the introduction of finely dispersed solid particles into cleaning and disinfecting solutions, which may potentially generate a local mechanical effect in the near-wall flow layer. The aim of the study was to computationally determine rational ranges of radii of solid dispersed particles for working solutions used in clean-in-place cleaning of dairy equipment, based on an assessment of their sedimentation stability, diffusion distribution, and chemical compatibility with acidic and alkaline media of sanitary treatment agents. Solutions based on peracetic acid (PAA) and hydrogen peroxide at concentrations of 0.045, 0.075, and 0.150 % calculated by the active substance, PAA, as well as sodium hydroxide solutions with mass concentrations of 0.5–2.0 %, were considered as dispersion media. Calcium carbonate, silicon dioxide, and titanium dioxide were analyzed as solid dispersed phases. The upper limit of the particle radius was determined using Stokes’ law under the condition of limited sedimentation velocity, while the lower limit was determined taking into account the sedimentation-diffusion equilibrium of particles over the height of the liquid column. It was established that, for the materials considered, the lower calculated radius limit was 4.2–5.3 nm, while the upper limit was 377–547 nm. For calcium carbonate in an alkaline medium, the calculated range was approximately 5.2–547 nm; for silicon dioxide in an acidic disinfecting medium, approximately 5.3–530 nm; and for titanium dioxide, approximately 4.2–379 nm. The narrower range for titanium dioxide is attributable to its higher density. It was shown that changes in the concentration of working solutions within the studied limits had only a minor effect on the calculated particle-radius boundaries. The obtained intervals may serve as a computational basis for subsequent experimental verification of the aggregative stability of the dispersed phase, compatibility with corrosion-resistant steel surfaces, completeness of particle removal after the clean-in-place cycle, and effectiveness of action on the biofilm matrix.</jats:p>
