Abstract
<jats:p>В связи с тенденцией к увеличению сроков годности многокомпонентных молочных продуктов до 24 мес. и более возникает необходимость оценки их хранимоустойчивости ускоренными методами. При этом специализированные нормативно-технические подходы для данной группы продукции отсутствуют. В статье приведены результаты соответствующих исследований, которые позволили подтвердить безопасное хранение продукта в течение 18 мес при стандартных условиях: температура от 0 до 25 °С и относительная влажность воздуха не более 75 %. Объектом исследований являлась сухая смесь для специализированного питания с массовыми долями жира – 25,2 %, белка – 10,5 %, влаги – 3,0 %, углеводов – 58,0 %. Смесь обогащена витаминно-минеральным комплексом. Методология базировалась на кинетической модели Аррениуса с учетом температурных коэффициентов ускорения (критерий Q₁₀). Согласно разработанной программе испытаний, образцы хранились 3,5 мес. с учетом коэффициента резерва 1,5 при температуре (52±2) °С. Результаты по всем исследованным показателям были положительными. Помимо основных физико-химических, органолептических и микробиологических показателей проводили оценку окислительной порчи липидов. Также определяли содержание витаминов, внесенных для обогащения. Установлено, что перекисное число жировой фазы исследованных образцов за период ускоренного хранения повысилось с 0,37 до 0,89 ммоль активного кислорода/кг, что значительно ниже установленного нормативного уровня (4,0 ммоль/кг). Наиболее выраженное снижение по отношению к фону отмечено у витамина А (ретинола) – на 3,5 %. Для витамина С (аскорбиновой кислоты) снижение составило 4,4 %, для инозита – 2,4 %. Это не является критичным. Такое снижение объясняется наименьшей стабильностью данных витаминов при хранении. Разработанный подход позволяет сократить длительность подтверждающих испытаний с 27 мес. (с учетом коэффициента резерва 1,5) до 3,5 мес. Он может быть использован для обоснования срока годности широкого спектра многокомпонентных молочных продуктов.</jats:p> <jats:p>With the shelf life of multi-component dairy products trending toward increased shelf life of 24 months or more, accelerated methods are needed to assess their shelf life. However, specialized regulatory and technical approaches for this product group are lacking. This article presents the results of relevant studies that confirmed the safe storage of the product for 18 months under standard conditions: temperatures from 0 to 25 °C and relative humidity no more than 75 %. The subject of the study was a dry mix for specialized nutrition with mass fractions of 25.2 % fat, 10.5 % protein, 3.0 % moisture, and 58.0 % carbohydrates. The mix is enriched with a vitamin and mineral complex. The methodology was based on the Arrhenius kinetic model, taking into account temperature acceleration coefficients (Q₁₀ criterion). According to the developed test program, the samples were stored for 3.5 months, taking into account a reserve factor of 1.5, at a temperature of (52±2) °C. The results for all studied parameters were positive. In addition to the main physicochemical, organoleptic, and microbiological parameters, an assessment of oxidative deterioration of lipids was conducted. The content of vitamins added for enrichment was also determined. It was found that the peroxide value of the lipid phase of the studied samples increased from 0.37 to 0.89 mmol active oxygen/kg during the accelerated storage period, which is significantly lower than the established standard level (4.0 mmol/kg). The most pronounced decrease relative to the background was noted for vitamin A (retinol) – by 3.5 %. For vitamin C (ascorbic acid), the decrease was 4.4 %, and for inositol – 2.4 %. This is not critical. This decrease is explained by the lower stability of these vitamins during storage. The developed approach makes it possible to reduce the duration of confirmatory tests from 27 months (taking into account a reserve factor of 1.5) to 3.5 months. It can be used to justify the shelf life of a wide range of multi-component dairy products.</jats:p>
