Abstract
<jats:p>В работе предложена физико-математическая модель процесса отделения сыворотки при самопрессовании кефира через лавсановый фильтрующий материал. В рамках упрощенной модели предполагается, что вблизи фильтрующего материала формируется эффективный консолидированный слой структурной фазы, обладающий пористостью и проницаемостью. Актуальность разработки модели связана с необходимостью теоретического описания мягкого концентрирования кисломолочного сгустка и определения факторов, влияющих на изменение скорости отделения сыворотки во времени. Показано, что в процессе самопрессования жидкая дисперсионная среда просачивается через лавсановый фильтр под действием силы тяжести, а дисперсная фаза задерживается фильтрующим материалом и формирует над ним слой пористого осадка. Толщина этого слоя возрастает во времени, вследствие чего область фильтрации рассматривается как двухслойная система переменной толщины, включающая пористый осадок и лавсановый фильтр. Модель основана на балансе дисперсной фазы, квазистационарном применении линейного закона Дарси, описании фильтрационной области как двухслойной пористой системы и учете капиллярного давления на нижней поверхности фильтра. Введены параметры, характеризующие положение свободной поверхности дисперсной системы, толщину пористого осадка, проницаемость лавсанового фильтра, проницаемость осадка, пористость осадка, вязкость и плотность жидкой дисперсионной среды. Получены зависимости, связывающие изменение высоты уровня кефирной дисперсной системы, толщины пористого осадка, скорости фильтрации, объемного расхода и объема отделившейся сыворотки во времени. Разработанная модель может быть использована как теоретическая основа для анализа процесса самопрессования кефира, оценки влияния свойств лавсанового фильтрующего материала и формирующегося осадка на отделение сыворотки, а также для последующей идентификации параметров модели при технологическом исследовании концентрированных кисломолочных продуктов.</jats:p> <jats:p>This study proposes a physico-mathematical model of whey separation during the self-pressing of kefir through a polyester filter medium. Within the simplified model, it is assumed that an effective consolidated layer formed by the structural phase develops adjacent to the filter medium and is characterized by porosity and permeability. The relevance of the model is associated with the need to provide a theoretical description of the gentle concentration of a fermented milk gel and to identify the factors governing changes in whey separation rate over time. It is shown that, during self-pressing, the liquid dispersion medium percolates through the polyester filter under the action of gravity, whereas the dispersed phase is retained by the filter medium and forms a porous cake layer above it. The thickness of this layer increases with time; therefore, the filtration region is considered a two-layer system of variable thickness consisting of the porous cake and the polyester filter. The model is based on the mass balance of the dispersed phase, the quasi-steady application of the linear Darcy law, the representation of the filtration region as a two-layer porous system, and the consideration of capillary pressure at the lower surface of the filter. The model incorporates parameters describing the position of the free surface of the dispersion system, the thickness of the porous cake, the permeability of the polyester filter and cake layer, cake porosity, and the viscosity and density of the liquid dispersion medium. Relationships were obtained that describe the temporal changes in the height of the kefir dispersion system, the thickness of the porous cake, the filtration velocity, the volumetric flow rate, and the volume of separated whey. The developed model may serve as a theoretical basis for analysing the self-pressing of kefir, assessing the influence of the properties of the polyester filter medium and the forming cake layer on whey separation, and subsequently identifying model parameters in technological studies of concentrated fermented milk products.</jats:p>
