AI-Driven Choice Architecture in Food Delivery

<jats:p>AI has become a key infrastructure in food delivery platforms, shaping both efficiency and how consumers make food choices. Through personalization, automation, and predictive systems, it reduces decision effort but can also trigger impulsive consumption. While these tools support convenience and health goals, they raise concerns about autonomy, well-being, and ethics, especially given links between impulsivity, overeating, and binge eating. This chapter reviews recent literature and conducts a Responsible AI audit of major platforms in Spain and Latin America, identifying AI features related to personalization, urgency, emotional nudges, transparency, and autonomy. Results show a tension between convenience and reflective choice, with Spain showing highly integrated but less visible AI, and Latin America showing more diverse practices and higher ethical risks. The chapter underscores the need for frameworks that enhance transparency, autonomy, and long-term consumer well-being.</jats:p>
