Abstract

<jats:p>Gıda güvenliği; gıdaların üretim, işleme, depolama, taşıma ve tüketim süreçlerinin tümünde canlı sağlığını tehdit edebilecek biyolojik, kimyasal ve fiziksel tehlikelerin kontrol altına alınmasını amaçlayan bütüncül bir yaklaşımdır. Bu süreçte veteriner hekimler hayvansal kaynaklı gıdaların üretiminde, zoonotik hastalıkların önlenmesi, veteriner ilaç kalıntılarının kontrolü, antimikrobiyal dirençle mücadele, hayvan refahı ve biyogüvenlik uygulamaları açısından kritik bir role sahiptir. Farklı prensip ve işleyişlere sahip olan HACCP, ISO 22000, GAP, GLP ve GVP gibi gıda güvenliği yönetim sistemleri, güvenli gıda üretiminin sağlanmasında temel araçlar olarak kullanılmaktadır. Buna ek olarak çiftlikten sofraya yaklaşımı ve Tek Sağlık kavramı, insan, hayvan ve çevre sağlığının birlikte değerlendirilmesini esas almakta; gıda güvenliğinin yalnızca son ürün kontrolü ile değil, üretim zincirinin her aşamasında risklerin kaynağında yönetilmesiyle sağlanabileceğini ortaya koymaktadır. Farklı risk grupları olmasına rağmen gıda güvenliğinde kalıntı riski taşıyan pestisitler, ağır metaller, mikotoksinler, veteriner ilaç kalıntıları, ambalaj materyallerinden kaynaklanan kimyasal migrasyonlar ve işleme sırasında oluşan toksik bileşikler önemli risk gruplarını oluşturmaktadır. Bu maddeler uzun süreli maruziyet sonucunda toksisite, endokrin bozukluklar, kanser, üreme sorunları ve antimikrobiyal direnç gibi ciddi halk sağlığı sorunlarına neden olabilmektedir. Bu nedenle sürdürülebilir ve güvenilir bir gıda sistemi için etkin mevzuat, düzenli izleme programları, risk temelli denetimler ve veteriner hekimlerin aktif katılımı vazgeçilmezdir. Food safety is a holistic approach aimed at controlling biological, chemical, and physical hazards that may threaten human health throughout all stages of food production, processing, storage, transportation, and consumption. In this context, veterinarians play a critical role in the production of foods of animal origin, particularly in the prevention of zoonotic diseases, control of veterinary drug residues, mitigation of antimicrobial resistance, assurance of animal welfare, and implementation of biosecurity measures. Food safety management systems with distinct principles and operational frameworks such as Hazard Analysis and Critical Control Points (HACCP), ISO 22000, Good Agricultural Practices (GAP), Good Laboratory Practices (GLP), and Good Veterinary Practices (GVP) serve as fundamental tools for ensuring the production of safe food. In addition, the “farm-to-fork” approach and the One Health concept emphasize the integrated evaluation of human, animal, and environmental health, highlighting that food safety can only be achieved not merely through end-product testing but by managing risks at their source across the entire production chain. Despite the diversity of risk groups, several contaminants pose significant residue-related risks in food safety, including pesticides, heavy metals, mycotoxins, veterinary drug residues, chemical migration from packaging materials, and toxic compounds formed during processing. Chronic exposure to these substances may lead to serious public health concerns such as toxicity, endocrine disruption, carcinogenesis, reproductive disorders, and the development of antimicrobial resistance. Therefore, for a sustainable and reliable food system, effective legislation, regular monitoring programs, risk-based inspection strategies, and the active involvement of veterinarians are indispensable.</jats:p>
