Abstract

<jats:title>Abstract</jats:title> <jats:p>A number of the basic alcoholic beverages have their distilled equivalents, with higher alcohol levels as a result of distilling over the alcohol together with volatile flavor substances. Thus whisk(e)y is the distilled version of (unhopped) beer, brandy is distilled wine, apple brandy is distilled cider, tequila is distilled pulque. Other distilled beverages do not have this same provenance. They include rum (produced from fermented molasses), vodka (which can be produced from diverse feedstocks) and gin (with its complex aromas due to various botanicals but always juniper). There is also a rich diversity of liqueurs based on one or more of the spirits.</jats:p>
